The care, time and attention that Doug and Irene provide to raising their poultry and growing their veggie potager has inspired us to bring the slow food sustainable method into our family home. Some of our favourite ways to cook Lilliput chicken is roasted with crème fraîche and herbs or a gorgeous coq au vin. We try our best to use the whole chicken and prepare sublime bouillons with leftovers. For summer beer garden parties with friends, charcoal roasted chicken and spice rub is always a crowd pleaser.
